Firey Lamb Curry / lal-Mass


ji teekha us waqt bhaata hai jub aapko apni zindgi pheeki lagne lagti hai...yaane be-maza. iska matlab hai, swaad ke saare chatkhaarey mil kar hi zindgi ko mazedar banaate hain..aur jub serdi zukaam ya bukhaar ke baad muh ka zaayeqa badal jaata hai tab...in teekhi teekhi swaadbhari recipies ke liye dil machal uth-ta hai...phir bhi zukaam ka intizaar kiye baghair...is serd mosam yaane December ki thartharati dopehar may kyon na is Miss fiery ka maza liya jaaye....aaiye jaldi se...tayaar karte hain lal-jaan-lal-mass.

Ingrediants
Bonelss mutton ½ kg
Ginger garlic paste 1 tbs
Yogurt ½ cup
Pureghee/oil 3 tbs
Green cordamoms 5
Black cardamoms 2
Cinnamon 2 sticks
Whole dry chilies 8 to 10
Cumin seeds 1tsp
Garlic sliced 5 cloves
Onion sliced 2 medium
Tomato 1
Coriander powder 2 tbs
Red chillies crushed 5
Bay leaves 2
Coriander leaves
Direction
Take mutton pieces in a bowl, add salt, ginger garlic paste,yogurt and mix.
Let it marinate for two hours.
Heat ghee/ oil in a pressure cooker, add bay leaves,green cardamoms, black cardamoms, four broken red chillies, cinnamon, cumin seeds and garlic and sauté for 4 to 5 min.
Add onions and sauté for another 4 to 5 min.and add tomatoes and sauté 4 to 5min.
Add marinated mutton and sauté for ten min.
Add coriander powder, crushed red chillies and mix.
Add two cups of water and mix.
Pu the lid of the pressure cooker on and pressure cook till 4 whistles .
Serve hot garnished with whole red chillies anf finely chopped coriander leaves.
