Mast Mutton Pulao

Haan sahibaan..sahi pehchaana..aakhir vo ghadi aa hi gai jiska aap sab ko intizaar tha...aap sab ko jis se pyaar hai aaj vo bhi aap sab ke liye be-qarar hai. aap ke ek qadam badhane ki der hai ,vo bhi app ke liye machal kar aap se mil jaane ko tayyar hai...ji ji ji haan ji....wahi apna puraana yaarana...apna pyaara mutton pulao mastana.....mujhey yaqen hai ke ye pulao iske masalon ke saath aapka dinner table mehka dega..aapki shaam bana dega...ek khush-gawaar lamha, ek bojhal si shaam ko bhi sanwaar deta hai...tou kyon na hum apna ye dull mood zara change karen..apni aur dusron ki bhi shaam sanwar den...chaliye lijiye haath may pan aur saath may pehelwaan..i mean apne saathi ko assistant bana len is dish ko tayyar karne may...taaki jub tak ye tayyar ho iski mehak ka maza len...

Indgrediants

-------------------

2 lbs basmati rice

3 lbs mutton

5 onions (thinly sliced)

2 to 3 Stick cinnamon

6 green cardamoms (crushed)

6 cloves

1 tsp red chili powder

2 tbs ginger garlic paste

1 tsp coriander powder

4 finely chopped tomatoes

8 green chillies

1 cup chopped mint leaves

1 cup chopped coriander leaves

2 tbs lemon juice

1 cup beaten curd

¼ cup ghee

¼ cup oil


Direction

---------------

Wash & soak the rice in water for one hour.
Heat oil and ghee in a deep dish.
Add the cinnamon stick, cloves, and green cardamoms.

Add onions and fry till they turn brown.

Now add ginger garlic paste, green chilies and fry for 3 min.

Now add mint and coriander leaves and sauté for 2 min.

Add mutton pieces and fry it for 5 to 10 min.

Add some salt and coriander pwd, chilli pwd, chopped tomatoes and fry for 5 more min.

Now add beaten curd and let it cook or put this mixture in a pressure cooker for 20 min.

Now ready to prepare the rice separately in Wide pan. First boil the water and then put the rice and salt .after one or two boils drain the water.

Now you can add the rice with mutton and mix it well.. And garnish with some mint leaves and coriander leaves.

Let it cook for 10 min in a low heat.

Now your delicious Mutton pulao is ready to serve with raita and bagara baingan.

Double Ka Meetha



Dosto…aaha..aaj is blog ke nasib jaage hain…aaj is blog per aap sab ki dawat-e-shahi ke liye, ek shaandaar, zaayeqedaar recipie aap sab ko madhosh karne aai hai..ye vo zaayeqa hai jo saadgi ko deewangi may tabdil kardeta hai..Be-zubaani ko maang per majbur kardeta hai..aji haan apna wahi shahon ka shaahi tukda…yaane ke bread ka meetha…ye shaaz-o-nadar hi dastarkhwanon per sajta hai..magar jub bhi sajta hai mehmanon ka dil khush kar deta hai..tou lijiye nek kaam may der kyon..chaliye shuru karen Bismillah…
Ingredients
  • About 8 bread slices
  • 2 cup sugar
  • 3 cup water
  • 3 cups milk
  • 1 cup condensed milk
  • 1/2 tsp cardamom powder
  • few strands of safron
  • 1/2 cup mixed nuts ( pistas, cashews, slices almonds )
Direction
Cut the bread into quarters.
In a heavy bottom pan add some ghee and then toast these Slices.
Turn them when golden brown.
Prepare the sugar syrup by adding the sugar and water in a skillet until it thickens. remove from heat and add the cardamom powder.
Warm the milk and condensed milk together and add saffron strands to it.
Arrange the bread slices in a deep pan,
and pour the sugar syrup over it.
Now pour the milk mixture over it.
Garnish it with toasted nuts.
Here is your mouth watering recipie ready to decorate your wonderful dinner you ever had.

Podina / Mint Ki Chutney

Dosto..aaj aapki wahi purani haribhari podine ki chutney aapki shehath-o-zaayeqe ka taqaza puri karne aai hai..podina anginnat fayede deta hai..refreshment ke saath anek tibbi(medical)fawayed hain iske..quwat-e-meda badhata hai..bhuk badhata hai..gharz ye her qism ki ghiza ko hazam karne ke kaam ata hai..Podine ko sab ne apne apne andaz may peesa aur fayeda haasil kiya.gharz podina pees kar bhi bhala kar hi jaata hai sab ka..jis tarha ek nek amal mukhalif halaath ke bawajud phal deta hai.lijiye aapki podine ki chutney..khaiye aur apni sehath bahaal kijiye…

Ingredients

1 cup mint leaves
1 cup fresh coriander
green chillies to taste chopped
½ cup tamrind pulp
A tiny piece of ginger
1 onion chopped
1 cup fresh grated coconut
Direction
-----------------
Chop the mint and coriander roughly.
Put them into the grinder along with the rest of the ingredients.
Add the tamrind paste and salt and as little water as possible.now add chopped onions and Grind for just one or two seconds.
Taste and see if you need more salt or tamrind paste as your taste.
now your delicious and a best benefactor is ready to serve with your snacks,fried rice,dhoklas.
It is all time favourite.

Tomato Chutney



Dosto..lijiye chutney bahaar..rozmarra ka ekse zaayeqon se uub kar koii tekha chatkhara kyon na azmaya jaaye..aur vo bhi tamatar waala..ye khane aur khilane waali khaas recipie hai..kha ke dekh len…

Ingredients

1 large onion, chopped
3 tablespoons oil
3 large ripe tomatoes, diced
10 red chilies
½ cup grated coconut
2 teaspoons tamarind extract
½ tsp cumin seeds
salt
curry leaves
¼ tsp mustard seeds

Directions

First Roast all ingredients like,grated coconut, dry chillies,cumin seeds. grind them first and add tamarind extract, salt,tomatoes and grind them for 2 more sec,add onion and grind it for another 2 sec. In a pan heat the oil & add 1 tsp of mustard seeds and curry leaves,now add the girNded pulp,fry it for 2 min.now your tasty tangy chutney is ready to eat with idlies ,dosas,chappatis..enjoy your breakfast with this delichious red hot tomato chutney.

Bread Roll



Dosto.ek aur shaam phir soch rahi hai ke aaj aapko kya khilaun..…aaj ki shaam ka zayeqa is namkeen dish ke naam bilkul munafard andaz may..kuch naya karne ka shauq, nai masrufiyet, dono hi kuch der ke liye hi sahi humen behla lete hain..in hungami halaath se zara hut kar aaiye is nayee zaayeqe ke sang is shaam ko ek naya rang den..

Ingrediants
----------------
2 Big Potatoes (boiled and mashed)
7-8 Bread Slices
Coriander leaves finely chopped
Green chilies (chopped)
Red Chili powder 1/2
turmeric powder 1/4
1/4th tsp Garam Masala powder
cumin seeds 1/4
butter milk 1 cup
Oil for frying
salt
Direction
------------
Add salt, chili powder, gram masala, green chilies and coriander leaves to the mashed potatoes, mix well.
Heat the oil,add cumin seeds. Add chili powder,turmeric powder, gram masala, salt,green chilies and coriander leaves to the mashed potatoes, mix well. let it cook for 2 min.
Remove the edges of bread slices.
Take butter milk in a bowl and dip a bread slice for few seconds.
Squeeze the butter milk from the bread by pressing between palms gently.
Place a tbsp potato mixture over the damp bread and roll and seal the edges of the bread in such a way that the filling does not come out from any part of the bread.
Repeat the same process for making more rolls.
Heat oil in a kadhai and deep fry on medium flame till golden brown.
Serve bread rolls hot with green chutney and tomato sauce.

Fried Fish Curry


Haan saahebaan..lijiye ek aur pasandeeda recipie ke sang hum phir se aap sab ko ek naye zaayeqe ke safar per le jaane ke liye aagaye...ye recipie jub bhi Ammi-jaan banaya karteen un per bada pyaar aaya karta..waise Maa may bachon ki jaan basi hoti hai...khususan us waqt unki mohabbat qaabil-e-deed hua karti..jub vo bade chau se khaana banaaten aur bade pyaar se khaana khilateen.unke jaisa koii aur kahaan...chahe ye jahaan ho ya vo jahaan...ye Mother's favorite recipie hai...so jub bhi isey banaayen apni maaon ko khiraaj-e-aqeedat zarur pesh karen..gar maayen na hoteen hum bhi na hote..khuda ne bahut soch samjh kar insaan ko ye niyamat( Maa) di hai..aur hum unme gar khuda talaash karte tou humen wahin mil jaata..kyonki khuda ki makhlukh ki perwarish ka zimma Maa ke hi nerm-o-nazuk kaandhon per rakha gaya..aur Maa ne apna ferz sada bakhubi nibhaaya..jub khuda ki bandi itni shafeeq ho tou phir sochiye khuda kitna shafeeq hoga...bas usi ek soch ke saath is recipie ko banaiye....khushi khushi khaiye..waqi lajawab zaayeqa hai is ka...

Ingredients

Tilapia / cat Fish 4lbs
Onion – 2 medium
Ginger garlic paste - 1 tbsp
Chilli pwd - 1 tbsp
Turmeric pwd - 1/2 tsp
fennel seeds - 1 tsp
Cardamom 6
Cinnamon 2 sticks
Coriander seeds 2 tbs
Salt as per taste
Oil ¼ cup
Coconut milk 1 cup
Green chilies 5
Tomatoes 2
Chopped coriander – ½ cup

Marinate fresh fish with turmeric pwd ,chilli pwd,ginger garlic paste and salt for minimum one hour.
Firstly fry dry fennel seeds,coriander seeds,cordomom chilli powder and grind to a fine powder.put aside this mixture.
Next fry the marinated fish in sufficient oil on a low heat..and remove it before they are fully roasted.
Now heat a wide open pan and pour oil ,add cinomon,cordomom and finely chopped onions ,fry till the onion turns brown and add green chilies and 1 tsp ginger garlic paste and sauté for a while, now add ¼ tsp turmeric and ¼ tsp red chilli powder and fry for 2 min ,then add finely chopped tomatoes and fry them for 5 min. put some salt and now add the coconut milk and let it boil.now add the gounded masala pwd ( fennel.coriander seeds and cordomom and chilli pwd) cook for more 10 min..now its time for adding the fried fish into the hot curry.. cook on a low heat for more 10 min…garnish with coriander leaves.
Now the fried fish curry is ready to serve.

Dam Ka Gosht



Haan Dosto apne sahi pehchana, ye wahi shahi dastarkhwaan ki zeenath hai jisne ache ache nawabon ki, nawabzaadon ki chuti ki hai..jub vo na bach sake tou phir hum kya hain..hum bhi is recipie ke sang chutti manaayen aaiye..dam yaani saans rokna...jaise hi is dish ki mehak ati hai saans rukne lagti hai...ghabrayen nahi...maare khushi ke ...jub pehla niwaala lenge tou saans bahaal hojaayegi i mean wapes aajaayegi...yaane normal hojaoge...ye waqi lajawaab recipie hai, aur Hyderabad /dakan ki laadli hai..isey dukkani bhi kahaa jasakta hai...

Ingrediants

1 kg/ 2lb mutton, cut into flat pieces /pasande
8 red chillies
3 tsp khus khus, lightly roasted
1” piece adrak
12 flakes lasan
4 onions, cut into circles
2 tomatoes cut into circles
2 onions sliced fine and fried crisp
4 green elaichi
4 laung
2 pieces dalchini
A handful of kothmir, chopped
A handful of pudina, chopped
8-10 almonds, blanched and chopped fine
1 cup beaten curd
6 green chillies, slit
Salt to taste
Carrots 2 cut into round pieces
Potatoes 2 cut into round pieces
Cabbage 1 cup big pieces
Beens 1 cup cut into two pieces
Direction

Grind the spices into a fine paste: red chillies,almonds, khus khus,garam masalhe, adrak and lasan.
To the mutton add the beaten curd, red chilli, grinded masala, chopped kothmir, pudina, and salt to taste.
Take a wide open vessel ,first put a layer of onions,secondly tomatoes,then a round of carrots,al vegetables one by one and now add a layer of mutton and repeat the same .
Add the slit green chillies.now pour oil / ghee on it.
Pressure cook or cover tightly and cook till tender.
Garmish with fried onions and Serve hot.
